Goulash
(Gulyasleves)

Serves 6

 
  • 2 lb. beef
  • 1 tsp. salt
  • 2 onions
  • 2 tbsp. shortening
  • 2 tbsp. real hungarian sweet paprika
  • 2 bay leaves
  • 1 qt. water
  • 4 peeled and diced potatoes
  • 1/4 tsp. black pepper
  1. cut beef into 1 inch squares,
  2. add 1/2 tsp. salt.
  3. chop onions and brown in shortening,
  4. add beef and paprika.
  5. let meat simmer in its own juice for 1 hr. 
  6. add water, diced potatoes and remaining salt.
  7. cover and simmer until potatoes are done and meat is tender.

 

Prepare egg dumpling batter :

  • 1 egg
  • 6 tbsp. flour
  • 1/8 tsp. salt
  1. Add flour to unbeaten egg and salt.
  2. Mix well. Let stand for 1/2 hour for flour to mellow.
  3. Drop by teaspoonful into Goulash.
  4. Cover and simmer 5 minutes after dumplings rise to surface.

    Serve hot with dallops of sour cream.
     

NOTE: Spanish or other than Hungarian Paprika does not taste the same!
